Roasted Chicken & Veggies

So tonight we made one of our favorite meals and it turned out DELISH!!!
It was so simple too make also!!!


Roasted Chicken & Veggies




Ingredients
1 Whole Chicken
5 Celery Stalks
5 Carrots
1 Onion
Paprika
Thyme
Salt & Pepper

1) Get your crock pot out and place it on the low setting
2) Cut the carrots & celery stalks in half  
3) Slice up the onion
4) Place the carrots, celery & onions in the bottom of the slow cooker.
5) Clean the chicken and pat dry. 
6) Place the chicken in the slow cooker on top of the veggies
7) Season your bird with your seasonings and cook on low for 6 hours.

After the chicken is cooked, you can take it out and slice it up. The chicken and veggies make a really good broth form on the bottom of the crock pot. We serve it over quinoa. 

The quinoa is super easy to make. You just follow the directions on the package and it ends up being cooked like rice. We always replace the water with chicken broth.

The Magnificent Salad & homemade Balsamic Dressing



Ok, so this is almost a daily meal...

our salad is used either from left over chicken or tilapia

Salad

1 single serving pack frozen tilapia (or other fish)
peppers (usually the small bag)
fresh mushrooms
onions
garlic
mrs dash of your choice
olive oil
balsamic vinegar
honey
rosemary
cheese
strawberries
50/50 salad

First we put our fresh greens in a bowl and top them with cheese (not too much) and tomatoes if you choose

then you want to cut up the meat, peppers, onions & mushrooms
saute them with olive oil, garlic & the mrs.dash of your choosing
top your salad with the sauteed veggies and meat

then i make my salad dressing 

Balsamic dressing
1/8 cup olive oil
1/8 cup balsamic vinegar
rosemary
1 tbsp honey 

mix together and serve over salad
















Homemade Fruit Spread



Tell me this does not look DELISH!! we love making this stuff and using it for our kids peanut butter and jelly and toast.. its so simple and makes your house smell so good...

We usually make it different every time... As you start making it, you will change it up a little as well...

A good base recipe is all you need:

1 pack strawberries
1 back blueberries
1 pack blackberries
1 bag apples
honey (local honey is best)

1) put crock pot on low
2) cut up all the fruit and add it
3) add honey... about 1/3 or 1/4 cup
let this cook on low overnight or for about 9 hours...
take and blend it in a blender and set back on low for 3 hours
your done!

it usually fills up 3 12oz mason jars... 
you can freeze this also!!

Skillet Cookie Cake


Now this bad boy was good....
and was a split of the moment make...
love those....

I absolutely LOVE my skillets, they cook soooo much better then regular cookware... 

Skillet Cookie Cake:

6 Tbsp unsalted butter at room temp
1/2 cup sugar
1/3 cup brown sugar
1 Tbsp Vanilla extract
1 egg
1 cup semi sweet chocolate chips
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup all purpose flour

1) Preheat oven to 350
2) Combine and mix butter and sugars
3) stir in the egg and the vanilla
4) stir in the flour, baking soda and salt
5) Stir in Chocolate Chips
6) transfer to oiled skillet and spread evenly

Bake until brown... about 20 minutes :)

New Years Eve 2014

New Years Eve was PERFECT in our house. We didn't do much of anything. The hubs and i made a massive amount of food and we all went to bed over stuffed. Damien made it until 9:30 and Laina made is until 11:30. They both put themselves to bed. Daniel and i watched the fire works off Pikes Peak and went to bed at 12:05am... Not a very exciting night but the FOOD was!!!

We started off the night with some armadillo eggs and they were outstanding....

Armadillo Eggs:
12 eggs

6 fresh jalapenos
1 pack cream cheese
1 pack bacon

This recipe is SO simple and turns out OUTSTANDING!!!

chop your japs in half, then you want to clean out the middles... Leave some of the vines if you want it to have some kick. 
After you do this your going to fill each half with cream cheese...
Then you want to wrap each one with bacon...
bake on 375 for about 45 minutes and ENJOY!!!



Homemade "clean" Pizza

OK, we kinda cheated on this one. We love Whole Foods Market, so we went there and bought supplies.

1 fresh pizza dough
1 fresh sauce
1 fresh pack of cheese
1 pack pepperonis
can of pineapple

So for this, you will find all of these ingredients on the "fresh" bakery wall at whole foods... We used this as our "staple"

The sauce i wanted to make my own, i added some herb providence, oregano and garlic to the sauce before spreading it on the dough. 

Then we built the pizza how we wanted and topped the bad boy with some Mrs. Dash Tomato and Garlic seasoning... 

cooked this bad boy on 425 for 30 minutes or so... It was DELISH!!!
